I’m upset. I noticed a couple of weeks ago that a lot of people were beginning to pin recipes on Pinterest that had to do with pumpkin, apples and other fall-type recipes.

I love pumpkin. I love apples. Pumpkin and apples are probably my second favorite food combination right after… you guessed it, chocolate and peanut butter! So why, you ask, am I upset?

Because I’m not ready to let go of summer!! Noooo, I can’t do it. I can’t let go. If I admit that summer is slowly fading then that only means fall is coming and close behind is… the dreaded winter. Oh sure, it’s great to dress up in cute little scarves and boots and wool mittens, but let’s not forget about the COLD. I don’t know about your husband, but mine disturbingly enjoys the cold. He keeps the thermostat on lock down and I’m forced to endure 68 degree temperatures inside my own home!

So I really wanted to bake something this weekend that would scream summer, like a lemon cheesecake or a nice berry pie, but after much coaxing from my hubby I decided to give in and accept the inevitable. But hey, it worked out because a new season means new clothes, right? OF COURSE! So I got to go shopping and ended up with a super cute pair of leather riding boots… and a couple more things. (Sorry bank account! Kevin!)

Anyways, in the spirit of new shoes and the encroaching fall season, I baked a pumpkin apple spice cake with a yummy brown sugar glaze. Try it out and let me know what you think!

Pumpkin Apple Spice Cake with a Brown Sugar Glaze

  • 3 eggs
  • 3/4 cups brown sugar
  • 3/4 cups white sugar
  • 1/2 cup oil
  • 1/4 cup applesauce
  • 1 can (15 oz) pumpkin
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 2 heaped teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cup apples (peeled and chopped)
  • 1/2 cup walnuts or pecans (optional)


  • 1/2 cup brown sugar (firmly packed)
  • 1/4 cup butter
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar


1. Preheat your oven to 350 degrees. In a large bowl or stand mixer, beat eggs for 20-30 seconds. Gradually add the sugars, oil, applesauce, pumpkin, milk and vanilla. Beat until well blended.
2. In a separate bowl, sift together flour, cinnamon, cloves, nutmeg, salt and baking soda. Gradually add to egg mixture until combined. Stir in apples and, if desired, nuts. Pour batter into a greased baking dish.
3. Bake for 55 to 60 minutes or until an inserted cake tester or toothpick comes out clean. Let the cake cool completely, about two hours.
4. Bring the sugar, butter and milk to a boil over medium heat while whisking constantly. Boil for 1 minute, continuing to whisk constantly. Remove from the heat and stir in the vanilla. Gradually whisk in the powdered sugar. Stir gently for 3 to 5 minutes or until the mixture begins to cool. Pour immediately over the cooled cake.

    This looks awesome. It was in the 60′s here one morning last week, and I felt a sudden urge to get out my knitting needles and my pie pans! That brown sugar glaze looks really. good. We’ll be making this one sooner rather than later. :)
