Chocolate Chip Cookie Dough Truffles

Chocolate Chip Cookie Dough Truffles

Last Tuesday my little brothers got to meet their favorite author, Jeff Kinney, who writes the Diary of a Wimpy Kid series. The event was held by Rainy Day Books as a way to promote the newest book in the series, Diary of a Wimpy Kid: The Third Wheel. My brothers LOVE these books. Although I haven’t read them myself, we have watched the movies together as a family and love them. The movies were hilarious, so I can easily see why my brothers have read all 7 of the books.

Diary of a Wimpy Kid

In case you’re not familiar with the series, here’s a brief history which includes a link to some free stories. Before the Diary of a Wimpy Kid books were published, stories from the first three books appeared digitally for free on the website, where they are still available. Books in the core series by Jeff Kinney include Diary of a Wimpy Kid (2007), Diary of a Wimpy Kid: Rodrick Rules (2008), Diary of a Wimpy Kid: The Last Straw (2009), Diary of a Wimpy Kid: Dog Days (2009), Diary of a Wimpy Kid: The Ugly Truth (2010), and Diary of a Wimpy Kid: Cabin Fever (2011). Jeff Kinney has also written and illustrated The Wimpy Kid Do-It-Yourself Book and The Wimpy Kid Movie Diary. The series is a fixture on the USA Today bestseller list and the Wall Street Journal and Publishers Weekly bestseller lists. It has also remained consistently in the top spots on the New York Times lists since publication of the first book in the series in 2007.

Diary of a Wimpy Kid

My brothers (and mom a/k/a photographer for the day, thanks ma!) were given a tour of Jeff’s amazing tour bus and were then able to ask him questions in a relatively small group of people.

They found out that Greg, the main character of the series, has quite an appetite for sour cream and onion potato chips and chocolate chip cookie dough. While I too love sour cream and onion chips, not surprisingly I couldn’t quite think of a recipe that properly utilized them in a dessert dish. Luckily, chocolate chip cookie dough is also one of my favorites and there are a ton of desserts you can use it in!

So in honor of my brothers, Jeff and Diary of a Wimpy Kid, today I’m sharing a wonderful recipe for Chocolate Chip Cookie Dough Truffles.

An easy to make eggless chocolate chip cookie dough truffle recipe.

  • 1/3 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 1 cup flour
  • 1 cup miniature semisweet chocolate chips
  • 4oz semisweet chocolate (chopped)
  • 4oz chocolate candy coating or almond bark (chopped)
  • 1 tablespoon shortening

1. Line a baking sheet with wax or parchment paper and set aside. With a mixer, beat together butter, brown sugar and vanilla until combined. Add flour, beating until just combined. Stir in the chocolate chips.
2. Shape dough into balls and place on lined baking sheet. Put in the freezer for about 30 minutes.
3. While the dough is in the freezer, melt the chopped chocolate, candy coating or almond bark and shortening in a small saucepan over low heat or in the microwave, stirring every 30 seconds until melted.
4. Take the dough out of the freezer and drop each ball one at a time into the chocolate, rolling it around to cover completely. Lift the ball out of the chocolate using a fork and allow the excess chocolate to drop off. Transfer to wax or parchment paper and repeat until done.
5. Place truffles in the refrigerator for 30 minutes to allow the chocolate to set. Drizzle the remaining chocolate over the top of the truffles.
